A lot of family and friends have asked me to teach them certain recipes and techniques. So, I've decided to put a few lessons down on "paper"--and if I can figure out how to film myself working with a my handheld video camera (I believe it came with a mini tripod, so there's some hope), I will do some short instructional videos--and post them here on my blog. Some of these are how to's for techniques that I think may be generally useful--like how to properly frost a cake--and some are more advanced--how to temper chocolate, for instance. I've posted links to my various instructional posts and how-to guides to create a virtual, quasi-classroom, for any pastry chefs and home bakers out there who are looking to learn new skills or refine old ones.
